Notes:
Use whatever Mayo & Milk work for you.

If you like a thicker dressing or are making as a dip use full fat coconut milk or less of whatever milk you use.  I frequently use unsweetened almond milk.

Cozy, hearty, yummy - healthy too! 
Sweet Potato Chili
Sweet Potato Chili

Ingredients:
* 4 Medium Sweet Potato (peeled)
* 1 Cup Vegetable Broth
* 2 Smashed Garlic cloves
* 1/2  Onion Diced
* 1/2 Red Pepper Diced
* 1 32 oz can diced tomato
* 1 15oz can black beans
* 1 15 oz can cannellini beans
* 2 Tbls Worcestershire
* 2 Tbls Chili Powder
* 1 Tbls Cocoa Powder
* 1 tsp Oregano
* 1 tsp Paprika
* 1/4 tsp Cayenne (or Chipotle)

Instructions:
* Add dice onion, pepper & smashed garlic with 2 Tbls olive oil to a large sauce pan till soft.
* Add diced sweet potato and cup of veggie broth
* Simmer for a few minutes and then add the rest of the ingredients and stir
* Add salt & pepper to tast
* Simmer for 45 minutes, stirring occasionally
